Easy Family Meals: Quick Fajitas

Let me introduce you to one of the other most used appliances in our home (aside from the Instant Pot); the George Foreman grill! A neighbour had put up her old George Foreman grill on our local giveaway site. I claimed it because my husband Scott was always saying that he wished we had one. Honestly I thought it would never get used and take up precious real estate in our postage stamp sized kitchen! I claimed it anyways because I love my husband and he would do the same for me. Let me tell you this tiny appliance is worth its weight in gold! We butterfly our chicken breast prior to vacuum packing it and it only takes 5 minutes or so to cook to perfection. This means that we don't need to turn on our stove or oven on those hot summer days. It also makes supper very simple. We, as husband and wife team, are notorious for forgetting to take out meat the night before we need to cook with it. Since the meat is vacuumed packed though we discovered that you can plop it into a bowl of cold water in the fridge and within a few hours it's defrosted! I love hacks that make life easier...


Our quick fajitas consist of chicken breast coated in homemade taco seasoning blend found here. The only thing I do differently from Killing Thyme's recipe is I never have Mexican oregano or marjoram so I just use the oregano I have on hand. I cook them on the George Foreman grill (already heated up and sprayed with oil) for 5 minutes or until thoroughly cooked. Once I remove them and let them sit for a few minutes, I slice into thin strips and serve on tortillas with whatever toppings I want. Sometimes I quickly fry up some onions and peppers and other times I use tomatoes and lettuce. Salsa, hot sauce, sour cream, cheese (you can buy already shredded) and guacamole are our regulars too.

Supper doesn't have to be complicated, especially when you're in pain. As someone who was very passionate about cooking and healthy eating I felt like pain became a roadblock in the creation process. I had less energy and cooking became a tedious process while I still tried to maintain the same kind of cooking (read: detailed and tedious). I had to reframe what I assumed to be "the only way to cook". I started experimenting with new recipes and simpler ways of doing things. I feel like I repeat myself but it doesn't have to be all or nothing! Give yourself the permission to take life a little slower. Be a little more forgiving of yourself. There's still joy in cooking with minimal changes. You've got this!
