Easy Family Meals: Instant Pot Lentil Tacos

One of my sons is a vegetarian so as a family we eat a lot of veggie options. I found this recipe on www.tastesbetterfromscratch.com. It's a super easy throw-everything-in-and-press-start instant pot recipe. You can find the full recipe here.

I use vegetable broth instead of chicken broth to make it vegetarian friendly. There's not a whole lot more to say about it because it's THAT simple. You can put the lentil mixture in warmed up corn/flour tortilla shells or hard shell tacos as well. Top with whatever toppings you want and instant pot lentil tacos are a family hit!

Supper can be this easy!
